Steps

  • Chop the bread and mix with butter, milk, salt, and nutmeg.

  • Fry bacon until crisp in its own fat.
  • Mix bacon and its fat into the main mixture and leave for 30 minutes.
  • Fold in egg whites, drop spoonfuls of the mixture into simmering broth, and cook for 10 minutes.
  • Test for doneness and adjust as needed.
  • Shape into a large dumpling, wrap in a cloth, poach in water, slice, and fry in butter until golden.
