Steps

  • Remove skin or membrane from beef fillet and cut into small pieces.
  • Place meat and marrow or butter in food processor and process to a creamy consistency.
  • Transfer to a bowl and add Parmesan, salt, nutmeg, egg, and breadcrumbs.
  • Mix thoroughly and form into a ball.
  • Assemble moullégumes with the largest disc.
  • Press paste through moull into simmering broth.
  • Cook at a slow boil for a minute or two.
  • Turn off heat and allow to stand before serving.
