Steps

  • Melt a little of the butter and gently fry the onion.
  • Beat the rest of the butter until frothy, then cream with the whole egg and egg-yolk.
  • Mix in the parsley, salt, pepper, and ginger, and the cooled onion.
  • Add 1 tbsp of cold water, beat thoroughly.
  • Mix in the matzos.
  • Let the mixture rest for 30 minutes.
  • Form into dumplings and poach gently, covered, for 25 minutes.
