Steps

  • Preheat the oven to 150°C and butter and flour a baking tray.
  • Sift the flour into a mixing bowl and season with salt and pepper.
  • Cut the butter into small pieces and work into the flour.
  • Work in the egg yolk and Parmesan to make a stiff dough; if the mixture seems too dry add a little milk.
  • Roll out the pastry 1 cm thick and cut into 2.5-cm triangles, squares or circles.
  • Bake for 20 minutes and serve hot, dusted with Parmesan.
