Steps

  • Place all the ingredients except the caramel in a stock-pot with 1.1 liters of cold water.
  • Bring slowly to the boil, stirring every now and again.
  • Reduce the heat, partially cover the pan, and let the mixture simmer gently for 1 hour.
  • Strain and add the caramel to give the stock colour.
  • For additional color, sauté small onions in a non-stick pan before adding to the stock-pot.
